What's the difference between degermed and whole-grain cornmeal?
Degermed cornmeal has the germ and hull removed, giving it a finer texture, lighter color, and much longer shelf life. Whole-grain cornmeal retains these parts, offering more nutrients, fiber, and a heartier, nuttier flavor, but it can go rancid faster.
