What's the difference between 'bleached' and 'unbleached' white flour?
Bleached flour is chemically treated to age quickly, resulting in a whiter color and finer texture. Unbleached flour ages naturally, is slightly off-white, and has a denser protein structure. Nutritionally, they are very similar.
Why is it called 'enriched'?
