What does 'bleached' mean for flour?
Bleaching artificially ages the flour using oxidizing agents. This whitens the color, weakens the gluten for a more tender crumb, and allows the flour to absorb liquids and fats more efficiently, speeding up baking time.
Why is it 'unenriched'?
