How do I store compressed yeast?

What's the difference between compressed and instant yeast?
Compressed yeast is fresh, moist, and perishable, requiring refrigeration. Instant (or active dry) yeast is dehydrated into granules, has a much longer shelf life, and often doesn't need to be proofed in water first.
Can I substitute one for the other?
Yes, but with adjustments. As a general rule, 1 gram of compressed yeast is equivalent to about 0.4 grams of instant yeast. You'll also need to adjust the liquid in your recipe, as compressed yeast adds moisture.
