Ingredients
1 cup plain yogurt (full-fat or Greek)
1 cup granulated sugar
3 large eggs
1/2 cup vegetable oil
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
Zest of 1 lemon (optional)
Instructions
Preheat oven to 350°F (175°C). Grease an 8-inch round cake pan and line with parchment paper.
In a large bowl, whisk together yogurt, sugar, eggs, oil, vanilla extract, and lemon zest until smooth.
In a separate bowl, sift together flour, baking powder, and salt. Add dry ingredients to wet ingredients and fold gently until just combined. Do not overmix.
Pour batter into prepared pan and smooth the top. Bake for 30-35 minutes, or until a toothpick inserted in center comes out clean.
