Ingredients
1/2 cup creamy peanut butter (or other nut butter)
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon honey or maple syrup
1 teaspoon toasted sesame oil
1 clove garlic, minced
1/2 teaspoon grated fresh ginger
2-4 tablespoons warm water, as needed
Instructions
In a medium bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, sesame oil, garlic, and ginger until smooth.
Gradually add warm water, 1 tablespoon at a time, whisking until desired consistency is reached (thick for dip, thinner for dressing).
Taste and adjust seasoning, adding more soy sauce for saltiness, honey for sweetness, or vinegar for tang.
Serve immediately or refrigerate in an airtight container for up to 1 week.
Tips
For a spicy version, add 1 teaspoon sriracha or chili garlic sauce.
This sauce pairs well with spring rolls, salads, grilled chicken, or as a veggie dip.
If using natural peanut butter, stir well before measuring to incorporate the oil.
