Ingredients
2 1/4 teaspoons active dry yeast (1 packet)
1 cup warm water (110°F)
2 tablespoons honey or maple syrup
2 cups whole-wheat flour
1 cup all-purpose flour
1 teaspoon salt
2 tablespoons unsalted butter, softened
1/4 cup milk, warm
Instructions
In a small bowl, dissolve yeast and honey in warm water; let stand until foamy, about 5 minutes.
In a large bowl, combine whole-wheat flour, all-purpose flour, and salt. Add yeast mixture, butter, and warm milk; stir until a shaggy dough forms.
Turn dough onto a floured surface; knead until smooth and elastic, about 8-10 minutes, adding more flour if needed.
Place dough in a greased bowl, turning to coat. Cover with plastic wrap and let rise in a warm place until doubled, about 1 hour.
Punch down dough; shape into a loaf and place in a greased 9x5-inch loaf pan. Cover and let rise until doubled, about 45 minutes.
Preheat oven to 375°F. Bake bread for 30-35 minutes, until golden brown and hollow when tapped. Cool in pan for 10 minutes, then transfer to a wire rack.
