Ingredients
4 large eggs
1/4 cup milk
1/4 teaspoon salt
1/8 teaspoon black pepper
1 tablespoon unsalted butter
1/4 cup diced ham
1/4 cup diced green bell pepper
2 tablespoons diced onion
1/4 cup shredded cheddar cheese
Instructions
In a medium bowl, whisk together eggs, milk, salt, and pepper until well combined.
Melt butter in a nonstick skillet over medium heat. Add ham, bell pepper, and onion; cook, stirring occasionally, until vegetables are tender, about 3 minutes.
Reduce heat to medium-low. Pour egg mixture over the vegetables. Let cook without stirring for 30 seconds, then gently stir with a spatula, pushing cooked eggs from the edges toward the center.
Continue cooking, stirring occasionally, until eggs are almost set but still slightly moist, about 2-3 minutes.
Sprinkle cheese over the eggs and remove from heat. Let stand until cheese melts, about 1 minute. Serve immediately.
Tips
For extra flavor, substitute cooked bacon or sausage for the ham.
Add a pinch of paprika or cayenne pepper for a spicy kick.
Serve with toast or hash browns for a complete meal.
