Instructions
- Peel the green skin from the watermelon rind and slice the white part into thin strips, about 2 inches long.
- Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds; let them splutter.
- Add the sliced watermelon rind, turmeric powder, red chili powder, and salt. Stir well to coat.
- Cook for 10-12 minutes, stirring occasionally, until the rind is tender and slightly browned.
- Turn off heat, add lemon juice and cilantro, and mix well. Serve warm.
