Ingredients
2 cups water
1 cup granulated sugar
2 cups fresh fruit juice (e.g., lemon, strawberry, or mango), strained
1 tablespoon lemon juice (if not using lemon juice as base)

Instructions
In a medium saucepan, combine water and sugar. Heat over medium heat, stirring occasionally, until sugar is completely dissolved. Remove from heat and let cool to room temperature.
Stir in the fruit juice, lemon juice (if using), and salt. Mix well.
Pour the mixture into a shallow metal or glass dish (e.g., 9x13 inch pan). Cover with plastic wrap or lid and place in the freezer.
After 1 hour, check the mixture. It should be slushy around the edges. Use a fork to stir and break up ice crystals. Return to freezer.
Repeat the stirring process every 30 minutes for about 3-4 hours, until the mixture is completely frozen but fluffy and scoopable.
Once fully frozen, scoop into bowls or cups and serve immediately. For a firmer texture, freeze an additional hour without stirring.

For a smoother texture, process the finished water ice in a food processor before serving.
