Ingredients
2 cups all-purpose flour
2 tablespoons granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
2 large eggs
1 3/4 cups milk
1/2 cup unsalted butter, melted
1 teaspoon vanilla extract
Instructions
Preheat your waffle iron according to manufacturer's instructions.
In a large bowl, whisk together flour, sugar, baking powder, and salt.
In a separate bowl, beat the eggs, then add milk, melted butter, and vanilla extract; mix well.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
Lightly grease the waffle iron with nonstick spray or a little melted butter.
Pour about 1/2 cup of batter onto the center of the hot waffle iron and close the lid. Cook until golden brown and crisp, about 3-5 minutes depending on your iron.
Repeat with remaining batter. Serve immediately with desired toppings.
Tips
For extra crispiness, keep waffles on a wire rack in a warm oven (200°F) while making the rest.
Leftover waffles can be frozen and reheated in a toaster or oven.
Serve with fresh berries, whipped cream, maple syrup, or a dusting of powdered sugar.
