Ingredients
2 cups all-purpose flour
2 tablespoons granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
2 large eggs
1 3/4 cups milk
1/2 cup unsalted butter, melted, plus more for serving
1 teaspoon vanilla extract
1/2 cup maple syrup, for serving
Instructions
Preheat your waffle iron according to manufacturer's instructions.
In a large bowl, whisk together flour, sugar, baking powder, and salt.
In a separate bowl, beat the eggs, then add milk, melted butter, and vanilla extract; whisk until combined.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
Lightly grease the waffle iron with cooking spray or a little melted butter. Pour about 1/2 cup of batter onto the center of the hot iron, close the lid, and cook until golden brown and crisp, about 3-5 minutes.
Repeat with remaining batter. Serve waffles immediately with a pat of butter and a drizzle of warm maple syrup.
Tips
Keep cooked waffles warm on a baking sheet in a 200°F oven while cooking the rest.
For extra crispiness, let the waffles cool on a wire rack instead of stacking them.
Leftover waffles can be frozen and reheated in a toaster.
