Instructions
Preheat your waffle iron according to manufacturer's instructions.
In a large bowl, whisk together flour, sugar, baking powder, and salt.
In another bowl, beat eggs, then add milk, oil, and vanilla extract; mix well.
Pour the wet ingredients into the dry ingredients and stir until just combined (batter may be slightly lumpy).
Lightly grease the waffle iron with non-stick spray or oil. Pour about 1/2 cup of batter onto the center of the hot waffle iron and close the lid. Cook until golden brown and crisp, about 3-5 minutes. Repeat with remaining batter.
While waffles cook, prepare the whipped cream: In a chilled bowl, beat heavy cream, powdered sugar, and vanilla extract with an electric mixer until soft peaks form.
Wash and slice the fresh fruit as needed.
To serve, place a waffle on a plate, top with fresh fruit, and add a generous dollop of whipped cream.
