Ingredients
4 frozen waffles
4 large eggs
2 tablespoons milk
Salt and pepper to taste
4 slices bacon
2 slices cheddar cheese
1 tablespoon butter
Instructions
Cook bacon in a skillet over medium heat until crispy, about 6-8 minutes. Transfer to paper towels to drain.
In a bowl, whisk eggs with milk, salt, and pepper.
In the same skillet, melt butter over medium heat. Pour in egg mixture and cook, stirring gently, until scrambled and set, about 3-4 minutes. Remove from heat.
Toast waffles according to package directions until golden and crispy.
Assemble sandwiches: Place two waffles on a plate. Top each with half of the scrambled eggs, 2 slices of bacon, and 1 slice of cheese. Place remaining waffles on top.
Serve immediately, optionally with maple syrup or hot sauce.
Tips
For extra flavor, add a drizzle of maple syrup or a dollop of sriracha mayo.
You can substitute turkey bacon or sausage patties for the bacon.
If using homemade waffles, ensure they are thick and sturdy to hold the fillings.
