Ingredients
1 lb ground venison
1/4 cup breadcrumbs
1 large egg, lightly beaten
2 cloves garlic, minced
1 tbsp Worcestershire sauce
1 tsp salt
1/2 tsp black pepper
1/2 tsp onion powder
2 tbsp olive oil
4 hamburger buns
Lettuce, tomato, onion, and condiments for serving
Instructions
In a large bowl, combine ground venison, breadcrumbs, egg, garlic, Worcestershire sauce, salt, pepper, and onion powder. Mix gently until just combined; do not overwork.
Divide mixture into 4 equal portions and shape into patties about 3/4-inch thick. Make a small indentation in the center of each patty to prevent puffing.
Heat olive oil in a large skillet or grill pan over medium-high heat. Cook patties for 4-5 minutes per side for medium-rare, or until desired doneness (internal temp 160°F for medium).
Toast buns if desired. Serve patties on buns with lettuce, tomato, onion, and your favorite condiments.
Tips
Venison is very lean; adding a little olive oil to the patty mixture can boost moisture.
Handle the meat as little as possible to keep burgers tender.
These burgers pair well with a tangy cranberry or cherry relish.
