Ingredients
2 large flour tortillas (10-inch)
1/2 cup hummus
1/2 cup crumbled feta cheese
1 cup mixed greens (e.g., arugula, spinach)
1/2 cup cherry tomatoes, halved
1/2 cup cucumber, diced
1/4 cup red onion, thinly sliced
1/4 cup Kalamata olives, sliced
1/4 cup roasted red peppers, sliced
Salt and pepper to taste
Instructions
Lay tortillas flat on a clean work surface. Spread 1/4 cup hummus evenly over each tortilla, leaving a 1-inch border around the edges.
Sprinkle feta cheese over the hummus.
Divide mixed greens, cherry tomatoes, cucumber, red onion, olives, and roasted red peppers between the two tortillas, placing them in the center of each.
Season with salt and pepper to taste.
Fold the sides of the tortilla over the filling, then roll tightly from the bottom up, tucking in the filling as you go.
Slice each wrap in half diagonally and serve immediately, or wrap in foil for later.
