Ingredients
1 cup cherry tomatoes, halved
1 cup cucumber, sliced into rounds
1 cup carrot sticks
1 cup celery sticks
1 cup bell pepper strips (mixed colors)
1 cup broccoli florets
1 cup cauliflower florets
1/2 cup plain Greek yogurt
2 tablespoons mayonnaise
1 tablespoon lemon juice
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon black pepper
1 tablespoon fresh dill, chopped (optional)
Instructions
Wash all vegetables thoroughly. Cut cherry tomatoes in half, slice cucumber into rounds, cut carrots and celery into sticks, slice bell peppers into strips, and separate broccoli and cauliflower into small florets.
Arrange the vegetables on a large platter in an attractive pattern, grouping similar colors together.
In a small bowl, combine Greek yogurt, mayonnaise, lemon juice, garlic powder, salt, and black pepper. Mix well. Stir in fresh dill if using.
Place the dip in a small bowl in the center of the platter. Serve immediately or refrigerate until ready to serve.
Tips
For extra crunch, blanch broccoli and cauliflower in boiling water for 1 minute, then plunge into ice water before arranging.
The dip can be made a day ahead and stored in the refrigerator.
Feel free to add other vegetables like radishes, snap peas, or cherry radishes.
