Ingredients
- 8 ounces dried lo mein noodles or spaghetti
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1 cup broccoli florets
- 1 medium carrot, julienned
- 1 red bell pepper, thinly sliced
- 1 cup snow peas, trimmed
- 3 green onions, sliced
- 3 tablespoons soy sauce
- 2 tablespoons oyster sauce (or vegetarian stir-fry sauce)
- 1 tablespoon sesame oil
- 1 teaspoon sugar
- 1/4 teaspoon white pepper
Instructions
- Cook noodles according to package directions until al dente. Drain, rinse with cold water, and toss with a little oil to prevent sticking. Set aside.
- In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, sugar, and white pepper. Set aside.
- Heat vegetable oil in a large wok or skillet over high heat. Add garlic and ginger, stir-fry for 30 seconds until fragrant.
- Add broccoli and carrot, stir-fry for 2 minutes. Then add bell pepper and snow peas, stir-fry for another 2 minutes until crisp-tender.
- Add the cooked noodles and the sauce mixture. Toss everything together and cook for 1-2 minutes until heated through and well coated.
- Remove from heat, garnish with green onions, and serve immediately.
Tips
- For extra protein, add tofu, chicken, or shrimp.
- Substitute any vegetables you have on hand, such as mushrooms, bok choy, or cabbage.
- Adjust the sauce to taste: add more soy sauce for saltiness or a pinch of red pepper flakes for heat.
