- 2 cups water
- 2 large carrots, diced
- 2 stalks celery, diced
- 2 medium potatoes, peeled and diced
- 1 cup frozen corn
- 1 cup frozen peas
- 1 can (14.5 oz) diced tomatoes
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium-high heat. Add beef cubes and brown on all sides, about 5 minutes. Remove beef and set aside.
