Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup unsweetened almond milk
- 1/3 cup vegetable oil
- 2 tbsp apple cider vinegar
- 1 tbsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Line a muffin tin or grease a loaf pan.
- In a large bowl, whisk together flour, sugar, baking soda, and salt.
- In a separate bowl, combine almond milk, vegetable oil, apple cider vinegar, and vanilla extract. Let sit for 5 minutes to curdle.
- Pour wet ingredients into dry ingredients and stir until just combined. Do not overmix.
- Pour batter into prepared pan. Bake for 25-30 minutes for muffins, or 35-40 minutes for a loaf, until a toothpick inserted comes out clean.
- Let cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
Tips
- For chocolate version, replace 1/3 cup flour with cocoa powder.
- Store in an airtight container at room temperature for up to 3 days.
- Can be frozen for up to 1 month.
