  2. In a bowl, whisk egg yolks with remaining sugar and salt until pale. Slowly pour about 1 cup of hot cream into yolks while whisking, then pour yolk mixture back into saucepan.
  3. Cook over medium-low heat, stirring constantly with a wooden spoon, until custard thickens enough to coat the back of the spoon (170°F). Do not let it boil.
  4. Strain custard through a fine-mesh sieve into a bowl. Stir in vanilla extract if using. Cool to room temperature, then refrigerate at least 4 hours or overnight.
  5. Churn custard in an ice cream maker according to manufacturer's instructions. Transfer to a freezer-safe container and freeze until firm, about 4 hours.
  6. Line a baking sheet with parchment paper. Scoop ice cream into 8 equal portions and shape into rectangular bars around wooden sticks. Place on sheet and freeze until solid, at least 2 hours.
  7. Make chocolate shell: Melt chocolate chips and coconut oil in a microwave in 30-second bursts, stirring until smooth. Let cool slightly.
  8. Working quickly, dip each frozen bar into chocolate, letting excess drip off. Place back on parchment. Freeze for 10 minutes to set. Serve immediately or store in freezer.
