Ingredients
- 4 large ripe tomatoes, chopped
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 1/2 small beet, peeled and chopped
- 1/2 small onion, chopped
- 1/2 green bell pepper, seeded and chopped
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon Worcestershire sauce (optional)
Instructions
- Combine all ingredients in a blender or food processor.
- Blend on high until smooth, about 1-2 minutes.
- Strain the juice through a fine-mesh sieve or cheesecloth into a large bowl, pressing with a spatula to extract as much liquid as possible.
- Discard the pulp or reserve for another use.
- Taste and adjust seasoning with additional salt, pepper, or lemon juice if desired.
- Chill in the refrigerator for at least 30 minutes before serving.
- Stir well and serve over ice.

- For a smoother juice, strain twice.
- Store in an airtight container in the refrigerator for up to 3 days.
