Ingredients
1 1/2 lbs ground beef (80/20)
1 cup breadcrumbs
1/2 cup milk
1 small onion, finely chopped
1 large egg
2 tablespoons ketchup
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/4 cup ketchup (for glaze)
2 tablespoons brown sugar (for glaze)
Instructions
Preheat oven to 350°F (175°C). Line a 9x5-inch loaf pan with parchment paper.
In a large bowl, combine ground beef, breadcrumbs, milk, onion, egg, 2 tablespoons ketchup, salt, pepper, and garlic powder. Mix gently until just combined.
Transfer mixture to the prepared loaf pan and shape into a loaf. In a small bowl, mix 1/4 cup ketchup and brown sugar; spread over the top of the meatloaf.
Bake for 55-60 minutes, or until internal temperature reaches 160°F (71°C). Let rest for 10 minutes before slicing.
Tips
Let the meatloaf rest before slicing to keep it moist.
Leftovers can be refrigerated for up to 3 days or frozen for up to 3 months.
To reheat, microwave slices or warm in a 350°F oven for 10 minutes.
