Ingredients
1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
4 cups chopped turnip greens (about 1 bunch)
3 cups vegetable or chicken broth
1 medium potato, peeled and diced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
1/2 cup heavy cream or coconut milk (optional)
Instructions
Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
Add garlic and cook for 1 minute until fragrant.
Add turnip greens, broth, potato, salt, pepper, and red pepper flakes if using. Bring to a boil, then reduce heat and simmer for 15-20 minutes until potato is tender.
Use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer to a blender in batches and blend until smooth.
Stir in heavy cream or coconut milk if desired for a creamier texture. Adjust seasoning to taste.
Serve hot.
Tips
For a vegan version, use vegetable broth and omit the cream or use coconut milk.
This soup can be stored in the refrigerator for up to 3 days.
Garnish with a drizzle of olive oil and a sprinkle of red pepper flakes.
