Ingredients
1 cup (200g) baldo or long-grain rice
1/2 cup (50g) fine vermicelli (şehriye)
2 tablespoons (30g) unsalted butter or olive oil
1 1/2 cups (360ml) hot water or chicken broth
1/2 teaspoon salt
1/4 teaspoon black pepper (optional)
Instructions
Rinse the rice under cold water until the water runs clear, then drain well.
In a medium saucepan, melt the butter over medium heat. Add the vermicelli and stir constantly until golden brown, about 2-3 minutes.
Add the drained rice to the pan and stir for 1 minute to coat the grains with butter.
Pour in the hot water or broth, add salt and pepper, and bring to a boil.
Once boiling, reduce heat to low, cover the pan, and simmer for 15 minutes without lifting the lid.
Remove from heat and let it rest, covered, for 5-10 minutes.
Fluff the pilaf with a fork before serving.

For extra flavor, use chicken broth instead of water.
Do not stir the pilaf while it's cooking to avoid breaking the rice.
