  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add turkey wings and brown on all sides, about 5 minutes per side. Remove and set aside.
  2. In the same pot, add onion and cook until softened, about 5 minutes. Add garlic, carrots, and celery; cook for another 3 minutes.
  3. Return turkey wings to the pot. Add chicken broth, diced tomatoes, bay leaves, thyme, and rosemary. Bring to a boil, then reduce heat to low, cover, and simmer for 1.5 to 2 hours, until turkey is tender.
  4. Remove turkey wings from the pot. Let cool slightly, then remove meat from bones, discarding bones and skin. Shred meat and return to the pot.
  5. Optional: For a thicker stew, mix flour with 2 tablespoons cold water to make a slurry. Stir into stew and simmer for 5 minutes until thickened.
  6. Season with salt and pepper to taste. Serve hot, garnished with fresh parsley.
