Ingredients
1 lb lean ground turkey
2 tbsp vegetable oil
1 onion, sliced
2 cloves garlic, minced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 medium zucchini, halved and sliced
1 cup broccoli florets
3 tbsp soy sauce
1 tbsp hoisin sauce
1 tsp sesame oil
1/2 tsp ground ginger
Salt and pepper to taste
2 green onions, sliced for garnish
Instructions
Heat vegetable oil in a large skillet or wok over medium-high heat.
Add ground turkey and cook, breaking it up with a spoon, until no longer pink, about 5 minutes. Remove turkey from skillet and set aside.
In the same skillet, add onion and garlic; cook for 2 minutes until softened.
Add bell peppers, zucchini, and broccoli. Stir-fry for 4-5 minutes until vegetables are tender-crisp.
Return turkey to the skillet. Add soy sauce, hoisin sauce, sesame oil, and ground ginger. Stir well to combine and cook for 1-2 minutes until heated through.
Season with salt and pepper to taste. Garnish with sliced green onions and serve immediately.
