A lighter twist on the classic Reuben sandwich, featuring tender turkey, tangy sauerkraut, melted Swiss cheese, and Thousand Island dressing on grilled rye bread.

Ingredients
4 slices rye bread
2 tablespoons unsalted butter, softened
1/2 cup Thousand Island dressing
1/2 pound sliced cooked turkey breast
4 slices Swiss cheese
1 cup sauerkraut, drained and squeezed dry
Instructions
Spread one side of each bread slice with butter. On the unbuttered side of two slices, spread 1 tablespoon Thousand Island dressing each.
Top dressing with turkey, then 2 slices Swiss cheese per sandwich.
Divide sauerkraut over cheese, then spread remaining dressing on the unbuttered side of the remaining bread slices and place on top, buttered side up.
Heat a large skillet or griddle over medium heat. Cook sandwiches until golden brown and cheese melts, about 4-5 minutes per side. Press down gently with a spatula while cooking.
Remove from skillet, let rest 1 minute, then slice diagonally and serve.
Tips
For extra flavor, toast the rye bread lightly before assembling.
Serve with extra Thousand Island dressing for dipping.
Leftover sauerkraut can be stored in the fridge for up to a week.
