  2. Heat olive oil in a large Dutch oven over medium-high heat. Brown drumsticks on all sides, about 8 minutes total. Remove and set aside.
  3. Reduce heat to medium. Add onion, carrots, and celery; cook until softened, about 5 minutes. Add garlic and cook 1 minute more.
  4. Pour in white wine, scraping up browned bits. Let simmer until reduced by half, about 3 minutes.
  5. Add chicken broth, diced tomatoes, rosemary, thyme, and bay leaves. Return turkey to pot. Bring to a boil, then cover and reduce heat to low. Simmer for 1.5 to 2 hours, until turkey is tender and falling off the bone.
  6. Remove herbs. Adjust seasoning with salt and pepper. Serve over polenta, risotto, or mashed potatoes, garnished with parsley.
