Ingredients
2 tablespoons olive oil
1 large onion, diced
2 carrots, peeled and diced
2 celery stalks, diced
3 cloves garlic, minced
8 cups low-sodium chicken broth
2 cups shredded cooked turkey
1 teaspoon dried thyme
1 bay leaf
4 ounces wide egg noodles
Salt and black pepper to taste
2 tablespoons fresh parsley, chopped
Instructions
Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; cook until softened, about 5 minutes.
Add garlic and cook for 1 minute until fragrant.
Pour in chicken broth, add turkey, thyme, and bay leaf. Bring to a boil, then reduce heat and simmer for 15 minutes.
Stir in egg noodles and cook according to package directions until tender, about 8-10 minutes.
Remove bay leaf. Season with salt and pepper to taste. Stir in fresh parsley before serving.
Tips
For extra flavor, add a splash of lemon juice or a dash of hot sauce before serving.
Store leftovers in an airtight container in the refrigerator for up to 3 days. The noodles will absorb broth, so add a little water when reheating.
