Ingredients
1 lb ground turkey
1 tbsp vegetable oil
3 cloves garlic, minced
1 tbsp fresh ginger, grated
1/2 cup diced water chestnuts
1/4 cup low-sodium soy sauce
2 tbsp rice vinegar
1 tbsp hoisin sauce
1 tsp sesame oil
1/4 tsp red pepper flakes
2 green onions, sliced
1 head butter lettuce or iceberg lettuce, leaves separated
Instructions
Heat vegetable oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it apart, until browned and cooked through, about 5-6 minutes.
Add garlic and ginger; cook for 1 minute until fragrant.
Stir in water chestnuts, soy sauce, rice vinegar, hoisin sauce, sesame oil, and red pepper flakes. Cook for 2 minutes, stirring occasionally.
Remove from heat and stir in green onions.
Spoon the turkey mixture into lettuce leaves and serve immediately.
Tips
To make ahead, prepare the filling and refrigerate; reheat before serving.
Serve with extra hoisin sauce or sriracha on the side.
Use romaine hearts if butter lettuce is unavailable.
