Ingredients
4 turkey legs (about 3 lbs total)
4 tablespoons unsalted butter, softened
2 cloves garlic, minced
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme leaves
1 tablespoon fresh sage, chopped
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil
Instructions
Preheat oven to 350°F (175°C).
In a small bowl, combine softened butter, minced garlic, rosemary, thyme, sage, salt, and pepper until well mixed.
Pat turkey legs dry with paper towels. Gently loosen the skin of each leg with your fingers, then spread the herb butter evenly under the skin. Rub any remaining butter over the outside of the legs.
Heat olive oil in a large oven-safe skillet over medium-high heat. Sear turkey legs for 3-4 minutes per side until golden brown.
Transfer the skillet to the preheated oven. Roast for 60-75 minutes, or until the internal temperature reaches 165°F (74°C) when inserted into the thickest part of the leg.
Remove from oven, tent with foil, and let rest for 10 minutes before serving.
Tips
For extra crisp skin, broil for 2-3 minutes after roasting.
Serve with roasted vegetables or mashed potatoes.
Leftover turkey legs can be stored in the refrigerator for up to 3 days.
