8 ounces cremini mushrooms, sliced
1/4 cup all-purpose flour
2 cups chicken or turkey broth
1 cup heavy cream
1/4 cup dry sherry

Instructions
Melt butter in a large skillet over medium heat. Add onion and mushrooms; cook until softened, about 5 minutes.
Sprinkle flour over the mixture and stir constantly for 1 minute.
Gradually whisk in broth, cream, and sherry. Bring to a simmer, stirring frequently, until thickened, about 5 minutes.
Stir in salt, pepper, turkey, and peas. Cook until heated through, about 3 minutes.
Stir in parsley. Serve over warm puff pastry shells.
Tips
For a lighter version, substitute half-and-half for heavy cream.
Leftovers can be stored in the refrigerator for up to 3 days.
Serve over rice, toast points, or biscuits if puff pastry is unavailable.
