Ingredients
1 lb ground turkey
2 tbsp vegetable oil
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 cup broccoli florets
1 carrot, julienned
3 cloves garlic, minced
1 tbsp fresh ginger, grated
3 tbsp soy sauce
1 tbsp hoisin sauce
1 tsp sesame oil
1/4 cup chicken broth
1 tbsp cornstarch mixed with 2 tbsp water
2 green onions, sliced
Instructions
Heat vegetable oil in a large skillet or wok over medium-high heat. Add ground turkey and cook, breaking it up, until browned and cooked through, about 5-6 minutes. Remove turkey from skillet and set aside.
In the same skillet, add bell peppers, broccoli, and carrot. Stir-fry for 3-4 minutes until crisp-tender. Add garlic and ginger; cook for 30 seconds until fragrant.
In a small bowl, whisk together soy sauce, hoisin sauce, sesame oil, and chicken broth. Pour into skillet with vegetables. Return turkey to skillet.
Stir in cornstarch slurry and cook, stirring, until sauce thickens, about 1-2 minutes. Garnish with green onions and serve immediately over rice or noodles.
Tips
For extra heat, add a pinch of red pepper flakes with the garlic.
Substitute ground chicken or pork for turkey if desired.
Serve over steamed jasmine rice or lo mein noodles.
