Ingredients
2 slices sourdough bread (1/2 inch thick)
2 tablespoons mayonnaise
1 tablespoon whole berry cranberry sauce
4 ounces sliced roasted turkey breast
2 slices Swiss cheese
1/4 cup fresh baby spinach leaves
1 tablespoon unsalted butter, softened
Instructions
Spread mayonnaise on one side of each bread slice. Spread cranberry sauce on the other side of one slice.
Layer turkey, Swiss cheese, and spinach on the cranberry side of the bread. Top with the other bread slice, mayonnaise side facing out.
Spread butter on the outside of both bread slices.
Heat a panini press or a large skillet over medium heat. If using a skillet, place the sandwich in the skillet and press down with a spatula or another heavy pan. Cook for 3-4 minutes per side, until bread is golden and cheese is melted.
Remove from heat, let cool for 1 minute, then slice in half and serve.
Tips
For extra flavor, add a layer of thinly sliced red onion or a few slices of apple.
If you don't have a panini press, use a grill pan or a regular skillet and press with a heavy object.
