Ingredients
2 cups cooked white rice (preferably day-old)
1 lb ground turkey or 2 cups diced cooked turkey
2 tbsp vegetable oil
1 small onion, diced
2 cloves garlic, minced
1 cup frozen mixed vegetables (peas, carrots, corn)
3 tbsp soy sauce
1 tbsp oyster sauce (optional)
1 tsp sesame oil
2 green onions, sliced
Salt and pepper to taste
Instructions
Heat oil in a large skillet or wok over medium-high heat. Add ground turkey (if using raw) and cook, breaking it up, until browned and cooked through. If using cooked turkey, skip to step 2.
Add onion and garlic; stir-fry for 2 minutes until fragrant.
Add frozen vegetables and cook for 2-3 minutes until heated through.
Add cooked rice, soy sauce, oyster sauce (if using), and sesame oil. Stir-fry for 3-4 minutes, breaking up any clumps of rice, until everything is well combined and hot.
Season with salt and pepper to taste. Garnish with sliced green onions and serve immediately.
Tips
For best results, use cold, day-old rice to prevent mushiness.
Substitute turkey with chicken, beef, or tofu.
Add a pinch of red pepper flakes for heat.
Serve with additional soy sauce or chili oil on the side.
