Ingredients
2 lbs turkey thighs, skin-on, bone-in
1/2 cup soy sauce
1/2 cup white vinegar
1 cup water
6 cloves garlic, crushed
1 teaspoon whole black peppercorns
2 bay leaves
1 tablespoon vegetable oil
Salt to taste
Instructions
Heat vegetable oil in a large pot over medium-high heat. Add turkey thighs, skin-side down, and sear until golden brown, about 3-4 minutes per side. Remove and set aside.
In the same pot, add garlic and cook until fragrant, about 30 seconds. Add soy sauce, vinegar, water, peppercorns, and bay leaves. Bring to a boil.
Return turkey thighs to the pot, reduce heat to low, and cover. Simmer for 40-45 minutes, turning occasionally, until turkey is tender and cooked through.
Remove lid and increase heat to medium. Let sauce reduce slightly, about 5 minutes. Season with salt if needed. Serve hot over steamed rice.
Tips
For a richer flavor, marinate turkey in soy sauce and garlic overnight.
Leftovers taste even better the next day as flavors meld.
