2 cups chicken or turkey broth
1 cup heavy cream
1/2 cup frozen peas, thawed
1/4 cup diced pimentos, drained
3 cups cooked turkey, diced

1/4 teaspoon black pepper

2 tablespoons dry sherry (optional)
4 slices white bread, toasted, or 4 puff pastry shells
Instructions
Melt butter in a large skillet over medium heat. Add onion and mushrooms; cook until softened, about 5 minutes.
Sprinkle flour over the vegetables; stir and cook for 1 minute.
Gradually whisk in broth and cream. Bring to a simmer, stirring constantly, until thickened, about 3-4 minutes.
Stir in peas, pimentos, turkey, salt, pepper, paprika, and sherry if using. Cook until heated through, about 3 minutes.
