Ingredients
4 large ripe tomatoes
2 cans (5 oz each) tuna, drained
1/4 cup mayonnaise
1/4 cup finely chopped celery
2 tablespoons finely chopped red onion
1 tablespoon fresh lemon juice
1/2 teaspoon Dijon mustard
Salt and pepper to taste
2 tablespoons chopped fresh parsley (optional)
Instructions
Slice off the top 1/4 inch of each tomato. Using a small spoon, scoop out the pulp and seeds, leaving a thick shell. Discard pulp or save for another use. Invert tomatoes on a paper towel to drain.
In a medium bowl, flake the drained tuna with a fork. Add mayonnaise, celery, red onion, lemon juice, Dijon mustard, salt, and pepper. Mix until well combined. Stir in parsley if using.
Spoon the tuna salad evenly into the tomato shells. Serve immediately or refrigerate until ready to serve.
Tips
For a lighter version, substitute Greek yogurt for half the mayonnaise.
Stuffed tomatoes can be made up to 4 hours ahead; cover and refrigerate.
Serve with crackers or a side salad for a complete meal.
