Ingredients
2 ripe avocados, halved and pitted
1 (5 oz/142g) can tuna, drained and flaked
2 tablespoons mayonnaise
1 tablespoon lemon juice
1/4 cup finely diced celery
2 tablespoons finely diced red onion
1 tablespoon chopped fresh parsley
salt and pepper to taste
Instructions
In a medium bowl, combine the drained tuna, mayonnaise, lemon juice, celery, red onion, and parsley. Mix well and season with salt and pepper to taste.
Scoop out about 1 tablespoon of flesh from each avocado half to create a small well; reserve the scooped avocado.
Gently fold the reserved avocado into the tuna mixture until combined.
Spoon the tuna salad evenly into the avocado halves, mounding slightly.
Serve immediately, or refrigerate for up to 1 hour before serving.
Tips
For extra flavor, add a pinch of paprika or cayenne pepper to the tuna salad.
To prevent avocado from browning, brush the cut surfaces with lemon juice.
Leftover tuna salad can be stored in the refrigerator for up to 2 days.
