Ingredients
1 lb (450g) elbow macaroni
4 tbsp (60g) unsalted butter
1/4 cup (30g) all-purpose flour
3 cups (720ml) whole milk
1 cup (240ml) heavy cream
2 cups (200g) shredded Gruyère cheese
2 cups (200g) shredded sharp white cheddar cheese
1/2 cup (50g) grated Parmesan cheese
1 tsp truffle oil (or to taste)
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp garlic powder
1/2 cup (50g) panko breadcrumbs (optional, for topping)
Instructions
Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
Cook macaroni in salted boiling water until al dente, about 1 minute less than package directions. Drain and set aside.
In a large saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes until golden and bubbly.
Gradually whisk in milk and cream, stirring constantly until smooth. Cook until thickened, about 5 minutes.
Reduce heat to low. Add Gruyère, cheddar, and Parmesan cheeses, stirring until melted and smooth. Stir in truffle oil, salt, pepper, and garlic powder.
Add cooked macaroni to the cheese sauce and stir to coat evenly. Pour into prepared baking dish.
If using breadcrumbs, melt 1 tbsp butter and mix with panko. Sprinkle over the mac and cheese.
Bake for 20-25 minutes until bubbly and golden on top. Let rest for 5 minutes before serving.
Tips
For a stronger truffle flavor, add an extra 1/2 tsp truffle oil just before serving.
