Ingredients
1 cup raw almonds
1 cup raw cashews
1/2 cup raw pumpkin seeds
1/4 cup raw sunflower seeds
2 tablespoons maple syrup
1 tablespoon coconut oil, melted
1/2 teaspoon sea salt
1/4 teaspoon ground cinnamon
1/4 teaspoon cayenne pepper (optional)
Instructions
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, combine almonds, cashews, pumpkin seeds, and sunflower seeds.
In a small bowl, whisk together maple syrup, melted coconut oil, sea salt, cinnamon, and cayenne if using.
Pour the syrup mixture over the nuts and seeds, and toss until evenly coated.
Spread the mixture in a single layer on the prepared baking sheet.
Bake for 12-15 minutes, stirring halfway through, until golden and fragrant.
Remove from oven and let cool completely on the baking sheet (it will become crunchy as it cools).
Break apart any clumps and store in an airtight container.
Tips
For a sweeter version, add 1/4 cup dried cranberries or raisins after baking.
