  2. In a medium saucepan, combine milk, cream, vanilla, nutmeg, cinnamon, and salt. Heat over medium until steaming, do not boil.
  3. Slowly whisk the hot milk mixture into the egg yolks, a little at a time, to temper the eggs.
  4. Return the mixture to the saucepan and cook over medium-low heat, stirring constantly with a wooden spoon, until it thickens enough to coat the back of the spoon (about 170°F/77°C), about 5-8 minutes. Do not let it boil.
  5. Remove from heat and stir in rum or bourbon if using. Let cool slightly, then refrigerate until chilled, at least 2 hours.
  6. In a clean bowl, beat egg whites with remaining 1/4 cup sugar until stiff peaks form.
  7. Fold the beaten egg whites into the chilled custard until well combined.
  8. Serve cold, garnished with a sprinkle of nutmeg.
