8 corn tortillas (6-inch), cut into wedges
2 tablespoons vegetable oil
1/4 teaspoon salt
2 cups shredded Monterey Jack cheese (or Chihuahua cheese)
1/2 cup salsa roja (or your favorite salsa)
1/4 cup Mexican crema (or sour cream)
1/4 cup crumbled queso fresco
2 tablespoons chopped fresh cilantro
1 jalapeño, sliced (optional)
Instructions
Preheat oven to 400°F (200°C). Spread tortilla wedges on a baking sheet, drizzle with oil, and sprinkle with salt. Toss to coat. Bake for 8-10 minutes, until golden and crispy.
Remove chips from oven and sprinkle Monterey Jack cheese evenly over the chips. Return to oven and bake for 2-3 minutes, until cheese is melted and bubbly.
Transfer totopos to a serving platter. Drizzle with salsa and crema. Sprinkle with queso fresco, cilantro, and jalapeño slices if using. Serve immediately.
