A quick and cheesy Tex-Mex casserole that layers crunchy tortilla chips with seasoned beef, beans, and plenty of melted cheese, perfect for a weeknight dinner.

Ingredients
1 lb ground beef
1 medium onion, chopped
2 cloves garlic, minced
1 (15 oz) can black beans, drained and rinsed
1 (10 oz) can diced tomatoes with green chilies (such as Rotel), undrained
1 (1 oz) packet taco seasoning
1/2 cup water
3 cups tortilla chips (about 6 oz)
2 cups shredded Mexican blend cheese (8 oz)
1/2 cup sour cream (optional, for serving)
1/4 cup chopped fresh cilantro (optional, for garnish)
Instructions
Preheat oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
In a large skillet over medium-high heat, cook ground beef and onion until beef is browned and onion is softened, about 5-7 minutes. Drain excess fat.
Add garlic and cook for 1 minute until fragrant. Stir in black beans, diced tomatoes with green chilies, taco seasoning, and water. Bring to a simmer and cook for 5 minutes, stirring occasionally.
Spread half of the tortilla chips in the bottom of the prepared baking dish. Top with half of the beef mixture and half of the shredded cheese. Repeat layers with remaining chips, beef mixture, and cheese.
Bake for 15-20 minutes until cheese is melted and bubbly. Let stand for 5 minutes before serving. Serve with sour cream and chopped cilantro if desired.
Tips
For a spicier casserole, use hot diced tomatoes with green chilies or add a chopped jalapeño to the beef mixture.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave.
Feel free to substitute ground turkey or chicken for the beef.
