Ingredients
2 tablespoons olive oil
1 medium onion, chopped
2 cloves garlic, minced
4 cups canned crushed tomatoes
2 cups chicken broth
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup heavy cream (optional)
4 boneless, skinless chicken breasts (about 6 oz each)
1 tablespoon olive oil for chicken
1/2 teaspoon salt for chicken
1/4 teaspoon black pepper for chicken
1 teaspoon dried oregano
Instructions
In a large pot, heat 2 tablespoons olive oil over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute.
Stir in crushed tomatoes, chicken broth, sugar, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes, stirring occasionally.
While soup simmers, preheat grill or grill pan over medium-high heat. Rub chicken breasts with 1 tablespoon olive oil, then season with salt, pepper, and oregano.
Grill chicken for 6-7 minutes per side, or until internal temperature reaches 165°F (74°C). Let rest for 5 minutes, then slice.
If desired, stir heavy cream into soup for a creamier texture. Taste and adjust seasoning.
Ladle soup into bowls and top with sliced grilled chicken. Serve hot.
Tips
For a smoother soup, use an immersion blender to puree before adding cream.
Store leftover soup and chicken separately in the refrigerator for up to 3 days.
Garnish with fresh basil or croutons for added flavor.
