Ingredients
2 tablespoons olive oil
1 medium onion, diced
2 cloves garlic, minced
1 can (28 oz) crushed tomatoes
4 cups vegetable broth
1/2 cup long-grain white rice
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon sugar (optional, to balance acidity)
Fresh basil or parsley for garnish
Instructions
Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook 1 minute more.
Stir in crushed tomatoes, vegetable broth, rice, basil, oregano, salt, pepper, and sugar (if using). Bring to a boil.
