Ingredients
1 lb tilapia fillets, cut into 2-inch pieces
1 tbsp vegetable oil
1 medium onion, finely chopped
2 cloves garlic, minced
1 tbsp grated fresh ginger
1 tsp ground turmeric
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp chili powder (adjust to taste)
1 can (13.5 oz) coconut milk
1 cup water
1 tsp salt, or to taste
2 tbsp fresh cilantro, chopped, for garnish
1 tbsp lemon juice
Instructions
Heat oil in a large skillet over medium heat. Add onion and cook until soft, about 5 minutes. Add garlic and ginger; cook 1 minute more.
Stir in turmeric, cumin, coriander, and chili powder. Cook for 30 seconds until fragrant.
Pour in coconut milk and water. Add salt and bring to a gentle simmer.
Gently place tilapia pieces into the sauce. Spoon some sauce over the fish. Cover and cook for 8-10 minutes, until fish is opaque and flakes easily.
Remove from heat. Stir in lemon juice. Garnish with cilantro. Serve over steamed rice.
