- 4 green onions, sliced
- 1/4 cup chopped roasted peanuts
- Fresh cilantro for garnish
Instructions
- Cook rice noodles according to package directions; drain and rinse with cold water. Set aside.
- In a small bowl, whisk together peanut butter, soy sauce, brown sugar, rice vinegar, lime juice, sriracha, garlic, and warm water until smooth.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add bell pepper and carrots; stir-fry for 2-3 minutes until tender-crisp.
