Ingredients
4 stalks fresh lemongrass
4 cups water
2 tablespoons honey or sugar, or to taste
1 tablespoon fresh lime juice (optional)
ice cubes (for serving cold)
Instructions
Trim the lemongrass: cut off the root end and the top leafy part, leaving about 6 inches of the stalk. Remove the tough outer layers and bruise the stalks with the back of a knife to release flavor. Cut into 2-inch pieces.
In a medium saucepan, bring 4 cups of water to a boil. Add the lemongrass pieces, reduce heat to low, and simmer for 10-15 minutes until fragrant.
Remove from heat and strain the tea into a teapot or pitcher. Discard the lemongrass.
Stir in honey or sugar until dissolved. Add lime juice if desired.
Serve hot or chill in the refrigerator. To serve cold, pour over ice.
Tips
For a stronger flavor, let the lemongrass steep for up to 20 minutes.
Store leftover tea in the refrigerator for up to 3 days.
